The deep black sweet cherry, which is used for the production of the famous Black Forest Kirsch, belongs to the genus of stone fruit. In the case of stone fruit brandies, it is the very special cherries that bring a fruit-typical aroma to the brandy.
We have been distilling our cherries for decades using the old method with cherry stones. This method of production creates "the typical core tone" or "bitter almond tone", which makes the Kirschwasser incomparable. Black Forest Kirsch must be 100% distilled from fruits of the region and must not be sugared or flavored.
It is also used in the famous Black Forest cake.
